The Toorkie style roasts are available seasonally from October to Easter weekend. They feature harvest-style herbs like rosemary, lovage, bay leaf, and marjoram. Cooking it is an easy two-step process. Steam or boil the roast in its casing and then bake and baste. Most people have their roast done in 60 to 90 minutes. When the internal temperature reaches 75C, it's ready to eat.
