Soba Noodle, Spaghetti Squash and Seaweed Salad


Just toss a gourd in the oven and prepare the rest. Fast, delicious, nutritious.

Beautiful GLUTEN FREE Soba Noodle, Spaghetti Squash, and Seaweed Salad- rich in nutrition, and easy!

You need:

1 roasted and cooled spaghetti squash, removed from rind.
1 package of cooked and cooled soba noodles (about a pound)
1/2 cup wakame, rehydrated
1/2 cup laver, rehydrated
1 mixed cup of julienne shaved carrots and red cabbage
1 cup of finely chopped bamboo shoots or water chestnuts
1 tbsp black sesame seeds, whole

* Stir all of the above together, and then add these items to dress, 20 mins before serving:
3-5 tbsp of plain hoisin sauce, to taste
2 tbsp minced green onions
1 tbsp minced garlic
1 tsp minced ginger
1 tbsp sesame oil
juice of one lime, plus a pinch of zest (grapefruit works well too)
drizzle of coconut milk
siracha red chilli sauce to taste
finely chopped cilantro, basil, or perilla sprinkles.
pinch of white pepper
salt and pepper to taste

*feel free to add bell peppers or broccoli to chunk it up, or even a dollop of smooth peanut butter and hot peppers to give it a Thai vibe.
